Sassy Mustard Ham Salad

  • 24 oz roughly chopped ham (use good quality ham – non-honey ham is better)

  • 1 chopped green onions

  • Scant 1/2 C Mayonnaise (I like Duke’s)

  • 2 Tbsp Sassy Mustard

  • 1 tsp lemon juice

  • Dot of hot sauce of choice (I like Crystal)

  • 1/2 C chopped roasted and salted pecans

Directions: Combine ham and green onions and pulse in Cuisinart until combined. Mix together the next 4 ingredients and pulse with the ham and green onions. Stir in the chopped pecans by hand. Refrigerate at least 1-2 hours before serving. This is MUCH better made a day before serving. Wonderful on a sandwich or served as an appetizer with crackers.
