Sassy Mustard Vinaigrette
1 Tbsp cider vinegar
1 tsp minced shallot (can also use green onion)
3 Tbsp olive oil (I prefer light, but extra-virgin if you prefer)
1 tsp Sassy Mustard
1 tsp light or regular mayonnaise
½ tsp Dijon mustard
1/8 tsp kosher salt
dash of pepper
Directions: Combine vinegar and minced shallot and let sit for 5 minutes. Add all other ingredients and combine until emulsified. I like to do this in a jar.
