Sassy Mustard Vinaigrette

  • 1 Tbsp cider vinegar

  • 1 tsp minced shallot (can also use green onion)

  • 3 Tbsp olive oil (I prefer light, but extra-virgin if you prefer)

  • 1 tsp Sassy Mustard

  • 1 tsp light or regular mayonnaise

  • ½ tsp Dijon mustard

  • 1/8 tsp kosher salt

  • dash of pepper

    Directions: Combine vinegar and minced shallot and let sit for 5 minutes. Add all other ingredients and combine until emulsified. I like to do this in a jar.
