Sassy Black-Eyed Pea Salad
2 15 oz cans black-eyed peas, drained and rinsed
Half a can black beans, drained and rinsed
Half a green bell pepper, seeds removed and diced
Half an English cucumber quartered and sliced
1/3 C diced red onion
1 C grape tomatoes, cut in half if on the large side
sprinkle of chopped fresh parsley
1/4 C rice vinegar
3 tsp Sassy Mustard
1 clove garlic, minced
1/4 tsp salt
Directions: Combine the first 7 ingredients in a bowl. Whisk the last 4 ingredients to make the dressing. Add to bowl and stir well to combine. Chill for at least 2-3 hours or overnight to meld flavors.
