Sassy Black-Eyed Pea Salad

  • 2 15 oz cans black-eyed peas, drained and rinsed

  • Half a can black beans, drained and rinsed

  • Half a green bell pepper, seeds removed and diced

  • Half an English cucumber quartered and sliced

  • 1/3 C diced red onion

  • 1 C grape tomatoes, cut in half if on the large side

  • sprinkle of chopped fresh parsley

  • 1/4 C rice vinegar

  • 3 tsp Sassy Mustard

  • 1 clove garlic, minced

  • 1/4 tsp salt

Directions: Combine the first 7 ingredients in a bowl. Whisk the last 4 ingredients to make the dressing. Add to bowl and stir well to combine. Chill for at least 2-3 hours or overnight to meld flavors.
